  1. In a bowl, combine the egg, melted (liquid) coconut oil and a pinch of salt. Beat the mixture.
  2. Add the coconut sugar to the egg and coconut oil mix.
  3. Add half the almond flour and the half sachet of baking powder to the full mixture.
  4. Once the mix thickens and it becomes hard to stir with a utensil, gradually add the rest of the almond flour, mixing with your hands.
  5. If the dough is too thick, add 20-30ml of unsweetened almond drink to get the right consistency. This not only makes the mix easier to work with, but it's also a brilliant no-added-sugar option for those keeping an eye on their diet.
  6. Form small dough balls and place them on a baking tray lined with non-stick paper. Press them down slightly to shape into cookies.
  7. Bake at 170ºC for 14-16 minutes.
  8. Add sugar-free dark chocolate chunks for an extra kick of flavour. (Optional)
