  1. Thoroughly rinse the quinoa in water to remove the saponins and any bitterness. Rinse several times until the water runs clear.
  2. Bring the water to a boil with 4 g of salt and add the quinoa. Cook over medium heat until the liquid is absorbed and the quinoa is fluffy.
  3. Rehydrate the mushrooms in hot water for 1 minute, then drain and set aside.
  4. In a hot pan, add the coconut oil and chopped onion. Cook until softened.
  5. Add the mushrooms and sauté for a few minutes.
  6. Stir in the curry powder, garlic powder, salt, and a pinch of black pepper. Mix well to enhance the aroma.
  7. Add the tomato sauce and plain yogurt. Stir and cook for a couple of minutes until a creamy sauce forms.
  8. Serve the curried mushrooms with the quinoa and finish with a sprinkle of fresh parsley on top.
