- Start by mixing the wet ingredients: the eggs, cream cheese, and vinegar.
- Add the almond flour, xanthan gum, baking powder, erythritol, and a pinch of salt. Mix well until fully combined.
- Whisk the egg whites until stiff peaks form, then gently fold them into the mixture in batches, using smooth, folding motions to retain as much air as possible. This will give the roll a light and fluffy texture.
