- Preheat the oven to 160°C (top and bottom heat).
- In a small saucepan, melt the coconut oil, cinnamon, and coconut sugar. Then, add the soy cream. Add the flaked almonds and instant oat flour, stirring until all the ingredients are well combined.
- Spread the mixture onto a baking tray lined with parchment paper and bake for 10 minutes at 160°C. For an extra golden and crunchy finish, drizzle the mixture with maple syrup before baking.
- Remove the tray from the oven and let it cool slightly. While still warm, cut the mixture into your desired shapes, such as small squares.
- Melt the dark chocolate along with a little coconut oil in the microwave.
- Dip half of each cookie into the chocolate, then place them on parchment paper to cool.
