The solubility of Evoegg 2.0 is excellent, it is one of the best food sources to solubilise in water due to the sequence of amino acids that make up its proteins.
This can cause a significant amount of foam to form if shaken as you would with a whey protein; this is not a bad thing, but it can be tedious to wait for it to disappear.
Our recommendation is to use a shaker and shake Evoegg 2.0 just enough to dissolve it.

- 60ml water
How it is done:
- Pour the water into the mixer bowl and add the egg albumin.
- Whisk vigorously, using an electric whisk or by hand.
- Once the mixture has been whipped, pour it into a piping bag. If you don't have a piping bag, simply cut off the end of a piping bag, which will act as a piping bag.
- Put a sheet of baking paper on the tray.
- Add small amounts of the mixture, making sure they are in the shape of a pyramid.
- Bake for 3-4 minutes at 275ºC, in ''gratin'' mode.
