  1. Start by cutting the chicken breast into fillets. Place on a board and cover with parchment paper or cling film.
  2. Flatten the breast by beating it with a rolling pin to make soft, evenly thick fillets for better cooking. Squeeze the lemon juice over the breast and season with salt and black pepper. Massage to integrate.
  3. Crush some maize flakes into small pieces and transfer them to a plate. In another one, add the egg whites. In a third plate, combine the oat flour with the cayenne powder.
  4. Place the chicken fillets in the oat and cayenne mixture, then, dip them in the egg whites and finally, coat them with the crushed maize flakes.
  5. Cook in the Air Fryer for 12 min at 180°C or 15 min in the oven.
  6. When it's ready, chop and wash some lettuce. Place a bed of lettuce on the bread and top it with a crispy breast fillet. Add a good amount of the new sugar-free honey mustard sauce
