Leche frita! A classic Spanish pastry, but reinvented so that you can enjoy it as part of a healthy diet. Take note and let’s start:
Ingredients
- 500ml milk or plant-based drink
- 80g Rice Flour 2.0 by FoodSeries
- 2g Sucralose Powder by FoodSeries
- 15g Xylitol Powder by FoodSeries
- 5g Ceylon Cinnamon Powder by FoodSeries
- A small piece of lemon peel
- 1 cinnamon stick
- 1 egg

How to make: Fit Leche Frita

- Put the milk in a saucepan, add sucralose, lemon peel and cinnamon stick and bring to a gentle boil for 4-5 minutes to infuse.
- After the time has elapsed, turn off the heat and leave to cool.
- Remove the lemon peel and cinnamon stick.
- Now add the rice flour and mix well until well blended.
- Place the saucepan over medium heat and cook for a few minutes, stirring constantly, until the mixture thickens and becomes firm.
- Once it has thickened, transfer the mixture to a mould, it should be well spread out and 1 cm to 1.5 cm thick.
- Flatten the dough well and cover with cling film so that the top layer does not dry out.
- Refrigerate for at least 3 hours.
- Once firm, remove the film, unmould carefully and cut.
- Dip each piece in the rice flour and then in beaten egg.
- Place on baking paper.
- On the other hand, mix 1 large spoonful (15g) of xylitol with a small spoonful (5g) of Ceylon cinnamon.
- Pour the mixture on top and cook:
- In the oven: heat up and down, 12 min at 195 ºC.
- In the air fryer: 190 ºC, 7 min. After this time, carefully turn them over and cook for a further 3 minutes.
