  1. Preheat the oven to 170°C with top and bottom heat.
  2. In a large bowl, add the ripe banana, yoghurt, eggs, oat flour, erythritol, whey protein (if using), chia seeds and cocoa powder.
  3. Blend well using a hand mixer or food processor until you obtain a smooth batter.
  4. Line a baking tin with parchment paper and pour in the mixture. Make sure it is evenly distributed.
  5. Place the tin in the preheated oven and bake for around 35–40 minutes. If you prefer a moister texture, you can check with a toothpick to see if it’s cooked through.
  6. Once out of the oven, let the cake rest for a few minutes before serving.
