Ingredients
- 2 medium carrots
- 2 eggs
- 60 g Instant Oat Flour by FoodSeries
- 20 g Almond Flour by FoodSeries
- 20 g Evowhey Protein by SportSeries in vanilla flavour
- 30 ml Organic Virgin Coconut Oil by BioSeries
- 80 g natural yoghurt
- 40 g Erythritol Powder by FoodSeries
- 5 g Ceylon Cinnamon Powder by FoodSeries
- 6 g baking powder (chemical yeast)
- 1 handful of walnuts
- 150g cream cheese

- Chop the carrots and blend together with the eggs, oil and yoghurt.
- Transfer the batter to a bowl and add the sifted oat flour, ground almonds, cinnamon, erythritol and baking powder.
- Mix well, transfer to a silicone mould (this one is 15 cm in diameter) and cook in the microwave at maximum power for 5 minutes (or in the oven for 45 min at 180°C).
- For the topping, mix light cream cheese with vanilla protein. Place on top of the cake when cool and decorate with a few nuts.
