  1. Bring a pot of water to a boil. Once boiling, carefully add the eggs and cook for 6 minutes and 30 seconds for a slightly runny yolk.
  2. Immediately transfer the eggs to a bowl of ice water to stop the cooking process.
  3. Once cooled, carefully peel the eggs.
  4. In a bowl, mix HSN soy sauce, a drizzle of sesame oil, and a few slices of fresh ginger. Place the peeled eggs in the marinade, ensuring they are fully covered.
  5. Marinate for at least 2 hours in the fridge; for a stronger flavour, leave them overnight.
  6. In a large pot, sauté the minced beef until well-browned and fully cooked. Add some soy sauce if desired. Remove from the pot and set aside.
  7. In the same pot, sauté the mushrooms until tender and slightly golden. Remove and set aside.
  8. Repeat the process with the spinach, quickly stir-frying it until wilted. Remove and set aside.
  9. In the same pot, add a tablespoon of coconut oil and a few slices of ginger. Sauté for a couple of minutes to release the aroma.
  10. Add a generous splash of soy sauce and let it simmer gently.
  11. Pour in the water and stir in the protein chicken broth powder. Bring to a boil.
  12. Once boiling, add the noodles and cook according to the package instructions until al dente.
  13. Remove the noodles and divide them into serving bowls. Arrange the mushrooms, spinach, and minced beef evenly over the noodles.
  14. Pour the hot broth over the ingredients in each bowl, ensuring everything is well covered.
  15. Slice the marinated eggs in half and place them on top of the other ingredients.
  16. Optionally, garnish with sesame seeds or a pinch of chilli powder for extra flavour.
