  1. Start by mixing the wet ingredients: the eggs, cream cheese, and vinegar.
  2. Add the almond flour, xanthan gum, baking powder, erythritol, and a pinch of salt. Mix well until fully combined.
  3. Whisk the egg whites until stiff peaks form, then gently fold them into the mixture in batches, using smooth, folding motions to retain as much air as possible. This will give the roll a light and fluffy texture.
  4. Spread the batter evenly into a rectangular shape on a baking tray lined with parchment paper. Bake for 12 minutes at 190°C (375°F).
  5. Once out of the oven, roll the sponge while it is still warm, using the parchment paper to help shape it. Let it rest for a few minutes, then carefully unroll it.
  6. Place another sheet of parchment paper on top, flip the sponge over, and gently peel away the original paper.
  7. Mix the drained tuna with the tomato sauce and spread the filling evenly over the entire surface.
  8. Roll it up again, pressing lightly to keep it tightly sealed, like a large candy roll. Refrigerate for a few hours to allow it to firm up.
  9. Finally, remove the paper, trim the ends for a cleaner presentation, and decorate with cream cheese, chopped toasted hazelnuts, and fresh parsley.
