- In a bowl, mix the egg with the ricotta cheese and beat well.
- Add the almond flour along with the other ingredients and mix well.
- Knead with your hands until you get a smooth, homogeneous dough.
- Divide the dough into small portions and shape into gnocchi.
- Freeze for a few minutes to harden slightly.
- Cut the cherry tomatoes in half and cook them in the air fryer with a little coconut oil and salt for 8 minutes at 180ºC.
- Heat a pan over medium heat and add a tablespoon of virgin coconut oil.
- Cook the gnocchi for a few minutes, turning them occasionally so they brown evenly.
- Add the sauce to the pan and mix carefully.
- Serve the gnocchi on a plate, add a few cherry tomatoes, and sprinkle with Parmesan cheese and black pepper.
