- Preheat the oven to 180 °C (356 °F) with top and bottom heat.
- Whisk 90 ml of egg whites with 2 g of salt until stiff peaks form. Set aside.
- In another bowl, mix 1 egg with 60 ml of milk and 4 g of erythritol. Add 50 g of almond flour and 40 g of oat flour. Stir until you get a smooth, lump-free batter.
- Gently fold in the whipped egg whites little by little using soft, folding motions to keep the air in. This step is key for a fluffy texture.
- Spread the mixture onto a baking tray lined with parchment paper or a silicone mat, forming a thin, even layer.
- Bake for 10 minutes at 180 °C (356 °F). It should be cooked but still flexible.
- Remove from the oven and let it cool slightly. Carefully peel it off the parchment paper.
- Spread fig paste over the entire surface and gently roll it up using the paper to help you. Wrap in plastic wrap and refrigerate for 30 minutes to set its shape.
- Remove the plastic wrap, decorate with more fig paste on top, add chopped strawberries and chopped almonds.
- Slice into portions and enjoy. Juicy, fluffy, and absolutely delicious.
