- In a bowl, place the egg and add the melted butter, erythritol, vanilla essence, and baking powder. Mix well until you get a smooth, lump-free mixture.
- Add the Almond Flour and mix well.
- Chop the High Protein Dark Chocolate bar into small pieces.
- Add the chocolate pieces to the cookie dough and mix well.
- Divide the dough into 4 or 6 parts and shape them into cookies. Make sure they are thick.
- Place the cookie dough on a tray with parchment paper and put it in the freezer for about 20 minutes or in the fridge for about 2 hours.
- Preheat the oven to 180ºC. Take the cookies out of the freezer and bake them for 12-15 minutes until golden brown.
