  1. Put the milk in a saucepan, add sucralose, lemon peel and cinnamon stick and bring to a gentle boil for 4-5 minutes to infuse.
  2. After the time has elapsed, turn off the heat and leave to cool.
  3. Remove the lemon peel and cinnamon stick.
  4. Now add the rice flour and mix well until well blended.
  5. Place the saucepan over medium heat and cook for a few minutes, stirring constantly, until the mixture thickens and becomes firm.
  6. Once it has thickened, transfer the mixture to a mould, it should be well spread out and 1 cm to 1.5 cm thick.
  7. Flatten the dough well and cover with cling film so that the top layer does not dry out.
  8. Refrigerate for at least 3 hours.
  9. Once firm, remove the film, unmould carefully and cut.
  10. Dip each piece in the rice flour and then in beaten egg.
  11. Place on baking paper.
  12. On the other hand, mix 1 large spoonful (15g) of xylitol with a small spoonful (5g) of Ceylon cinnamon.
  13. Pour the mixture on top and cook:
  14. In the oven: heat up and down, 12 min at 195 ºC.
  15. In the air fryer: 190 ºC, 7 min. After this time, carefully turn them over and cook for a further 3 minutes.
