Soy lecithin is a source of polyunsaturated fatty acids, mainly in the form of phospholipids, which are lipid complexes consisting of two fatty acids, a phosphate group and a molecule that heads the structure. The phospholipids of soy letitin consist almost entirely of phosphatidylcholine.
