Do you know the traditional uses of soy lecithin in the kitchen? What is it exactly? Where does it come from?
It’s a fat that has always been used in the kitchen, but was extracted directly from foods, such as an egg (from the yoke).
In recent years, progress has been made in extracting lecithin from some plant compounds. The most recognised is the soy lecithin, due to the benefits that soy can bring to the body.

Soy lecithin has a variety of uses for your recipes. Take note!
Foams
You can create air or foam without the need for a siphon. Decorate your best dishes with a top-quality ingredient.

Soy lecithin in baking
Being an emulsifier, as we have seen before, soy lecithin is frequently used in the baking world.
Especially with baked goods, such as biscuits or cookies, improving fermentation and providing more absorption. What does this mean? It means a more delicious and delicate result.

Finally, it can also be used as a substitute for egg yolk in home baking.
