Homemade Tapioca Pearls recipe (Boba). Perfect for making homemade Bubble Tea!

- Add 100g tapioca starch to a bowl.
- Mix with these ingredients for colour:
- Black tapioca pearls with cocoa powder (add 1 scoop).
- Green tapioca pearls with matcha green tea (add 1/2 scoop).
- Add boiling water gradually and integrate until a dough consistency is achieved.
- Take the dough out of the bowl and knead it with your hands. Shape the dough into cylinders.
- Cut the dough to the size of a dice and shape it round with your hands (based on the desired size of the ball, in our case we made 25).
- Let the cut dough chill in the fridge for a couple of hours.
- Boil the dough in water with a pinch of salt.
- Times:
- 8 min -> Hard consistency.
- 12 min -> Normal consistency.
- 15 min -> Soft consistency.
- Transfer the cooked Boba to a bowl with a cold infusion of 100g erythritol + 500ml water.
- Leave to stand for 1 hour.
- Ready to use!
