How to make: Homemade Tapioca Pearls Recipe (Boba)

  1. Add 100g tapioca starch to a bowl.
  2. Mix with these ingredients for colour:
  3. Black tapioca pearls with cocoa powder (add 1 scoop).
  4. Green tapioca pearls with matcha green tea (add 1/2 scoop).
  5. Add boiling water gradually and integrate until a dough consistency is achieved.
  6. Take the dough out of the bowl and knead it with your hands. Shape the dough into cylinders.
  7. Cut the dough to the size of a dice and shape it round with your hands (based on the desired size of the ball, in our case we made 25).
  8. Let the cut dough chill in the fridge for a couple of hours.
  9. Boil the dough in water with a pinch of salt.
  10. Times:
  11. 8 min -> Hard consistency.
  12. 12 min -> Normal consistency.
  13. 15 min -> Soft consistency.
  14. Transfer the cooked Boba to a bowl with a cold infusion of 100g erythritol + 500ml water.
  15. Leave to stand for 1 hour.
  16. Ready to use!
