I love biscuits, and my all-time favourites are oat biscuits, but when I read their labels and I found out about a lot of the ingredients they are really made with, I decided to make them myself. Today, I’m going to share my recipe with you guys and hopefully I’ll inspire you to try something tastier than those typical oat cakes.
Oats are one of the cereals richest in protein, good fats, carbohydrates and even some vitamins, most importantly B1. It’s a cereal that’s really easy to digest and one that we should be including in our diet. When you make these, you’ll not only enjoy some delicious biscuits, but actually be enjoying a healthy product too.
This recipe will give you a simple biscuit, but you could definitely throw in raisins, dried fruits or chocolate chips to spice things up… pretty much whatever you fancy.

Ingredients
- 1 egg yolk + 5 egg whites
- 200g of FoodSeries instant vanilla flavour oat flour
- 1 tablespoon of olive oil
- 1 sachet (15g) of Royal yeast
- A pinch of reduced sodium salt
- 1 tablespoon of honey
- 30g of SportSeries vanilla flavour Evowhey 2.0
- A drop of liquid sweetener (you can adjust this to your taste)
- Half an apple
- A little lemon zest
- A Little orange zest

How to make: Recipe for healthy oat biscuits
- Place the oats, Evowhey, sweetener, yeast and salt in a bowl and mix everything together.
- In another recipient, whisk the eggs until they form stiff peaks before adding to the mixture
- Mix everything together with the help of a spatula, fork or whatever you find easier, making sure you mix it really well. It’s not necessary to use a mixer or food processor, as this technique gives us a better texture.
- Once everything has been perfectly mixed, seperate the dough into three portions and add the topping to each one. Add apple in small diced pieces and the different zests separately. Add honey to these to reduce acidity.
- Make small balls which we will then flatten by hand into a round shape before placing them on a baking tray or baking paper.
- Place them in a preheated oven for 12 minutes, or until you see that the edges are golden brown.
- Take them out of the oven and leave them to stand. Once they have cooled down they will have finished setting.
