How to make: Chocolate and Raspberry Hearts for Valentine’s Day

- Use heart-shaped silicone moulds as tools.
- Start by preparing the filling: mash the raspberries in a bowl with a fork to form a puree. Add the water, chia seeds, sweetener, and mix well.
- Let the mixture rest for 5-10 minutes, allowing the chia seeds to absorb the liquid and thicken.
- Next, fill the silicone moulds with the mixture, pressing lightly to ensure they are completely filled, and smooth the surface with a spatula. Place the moulds in the freezer and let them set for at least 1 hour, or until fully firm.
- Meanwhile, melt the dark chocolate using a bain-marie or in the microwave in 20-second intervals, stirring well between each heating to prevent burning. Once the raspberry hearts are firm, carefully unmould them and dip them into the melted dark chocolate until fully coated. Place them on a tray lined with wax paper and return to the freezer to let the chocolate harden.
- For decoration, melt the white chocolate in the same way as the dark chocolate. Fill a piping bag or a small plastic bag with the melted white chocolate, cut a small corner to create a fine hole, and draw decorative lines over the dark chocolate-covered hearts.
- Finally, place the decorated hearts in the fridge for 15-20 minutes to allow the chocolate to fully set. Enjoy!
