- Heat a tablespoon of olive oil or coconut oil in a large pot.
- Add the carrots, celery, and onion, and sauté for about 4 minutes until tender.
- Add the chicken broth along with the black pepper, garlic, and dill. If you're using protein broth, dissolve it here to enrich the flavor. Cook over medium heat for 5–6 minutes.
- Shred the roasted chicken breast. Set aside half for another recipe. Cook the noodles separately with a bit of broth for 10 minutes.
- Mix the cooked noodles and shredded chicken into the large pot. Adjust salt and pepper to taste.
- Serve hot and garnish with fresh parsley.
- For a special touch, sprinkle a tablespoon of nutritional yeast over the soup before serving.
