- In a bowl, mix the rice flour with the pea protein. Add the eggs and stir well until fully combined.
- Gradually add the water, only as much as needed to achieve a smooth, workable dough. Add a pinch of salt and oregano to taste.
- Pour the mixture onto a silicone mold or baking paper, shaping it into a pizza base.
- Bake in a preheated oven for 5–8 minutes at 170 ºC (340 ºF).
- Meanwhile, hydrate the freeze-dried mushrooms with a little water for a few minutes. Drain them well and cook in a frying pan with a small amount of olive oil for a few minutes.
- Remove the base from the oven and spread the tomato sauce with olive oil (3 ml) on top. Add the cooked mushrooms, cherry tomatoes, and grated mozzarella cheese.
- Return to the oven for about 8 more minutes, until golden and the cheese has melted.
- Remove from the oven, let it cool slightly, top with 10 g of fresh arugula, and enjoy.
