  1. Beat the eggs together with the milk, oil, vanilla and Greek yoghurt until well combined.
  2. Add the rice flour, erythritol, cocoa powder, baking powder, baking soda and a pinch of salt.
  3. Mix until you obtain a liquid and homogeneous dough.
  4. Leave the batter to rest for 15-20 minutes to gain consistency.
  5. Fill the muffin tins with the batter and bake at 175°C for 18-20 minutes, with heat up and down and fan.
  6. Mix the Speculoos flavoured Evowhey with the cream cheese until smooth and creamy.
  7. Let the muffins cool for at least 30 minutes before decorating.
  8. Cover the muffins with the frosting and use the melted dark chocolate to draw a spider web on top.
  9. Enjoy!
