  • 1 aubergine
  • 1 onion
  • 1 courgette
  • 1 red pepper
  • 1 green pepper
  • 3 tomatoes
  • 4 garlic cloves
  • 3 tablespoons of extra virgen olive oil
  • Salt
  • Sweet paprika

How to make: Turkey Fillet with Ratatouille

  1. Dice the vegetables.
  2. Cut the meat into thin strips.
  3. In a non-stick frying pan, pour the oil. When it's hot, add the garlic and onion. Stir well.
  4. Once fried, add the two peppers. Stir well.
  5. Then add the aubergine and courgette. Stir well.
  6. Finally, add the tomato with two teaspoons of salt and paprika. Stir well.
  7. Cook on a low heat until all the vegetables are 'poached', around 10 mins.
  8. In another pan, cook the turkey.
  9. Plate up.
