- Cover the textured pea protein with boiling water and let it sit for 10 minutes.
- While the protein is hydrating, sauté the onion, red pepper, and green pepper in a pan with a bit of oil. Cook until tender and golden.
- Mix the hydrated protein with the sautéed vegetables. Add the tomato paste, salt, garlic powder, and a touch of cayenne to give it an extra kick of flavour.
- Incorporate the chickpea flour and mix well. Place the mixture in the fridge for at least 2 hours to set.
- Shape the meatballs by pressing with your hands, without worrying about making them perfectly round.
- Add a bit of coconut oil to the pan and cook the meatballs until they are nicely browned.
- Add the tomato sauce and serve with spaghetti.
