  1. Peel and grate 1 carrot.
  2. Crack the egg into a bowl and add the milk and coconut oil. Whisk well until combined.
  3. Add the almond flour, baking powder, cinnamon and sweetener. Mix well.
  4. Finally, add the grated carrot and mix until evenly combined.
  5. Pour the mixture into a large mug and microwave on full power for about 2 minutes. Depending on the power of your microwave, it may need a little longer, but be careful not to overcook it or it may become dry.
  6. Remove from the microwave and leave to rest while you prepare the topping.
  7. Mix the cream cheese with the protein powder and a little water.
  8. Remove the cake from the mug, cover with the topping and decorate with some extra grated carrot and cinnamon.
  9. NOTE: Use a wide, cereal-bowl-style mug. The mixture should fill the mug just over halfway. If the mug is too narrow and the mixture reaches the top, it may overflow while cooking.
