- In a small pot, mix the water, milk, butter, and a pinch of sucralose. Heat over medium heat until the butter melts and the liquid begins to boil.
- Remove the pot from the heat and gradually add the rice flour. Stir vigorously with a wooden spoon or spatula until you get a smooth dough that comes away from the sides of the pot.
- Allow the dough to cool slightly (about 5 minutes) to avoid cooking the egg when added.
- Add the egg to the dough and mix well until you achieve a smooth, slightly sticky texture.
- Fill a piping bag fitted with a star nozzle with the dough. On a non-stick tray or parchment paper, pipe churros to your desired size.
- Preheat your Airfryer to 180°C for 3–5 minutes. Place the churros in the Airfryer tray, ensuring space between them for hot air to circulate. Cook at 180°C for 15 minutes, checking halfway through to ensure even browning.
- Final Touch
- Mix erythritol with cinnamon in a small plate or bowl. Once the churros are ready, remove them from the Airfryer. To help the cinnamon and erythritol stick better, lightly spray the churros with oil. Roll the churros in the mixture or sprinkle it over them.
- Serve the churros hot with your favourite dip and enjoy.
