- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a small bowl, mix the oregano, cayenne powder, sweet paprika, and salt. Stir well to combine.
- Brush the tortillas with the organic virgin coconut oil and sprinkle with the spice mixture.
- Place the whole wheat tortillas on a chopping board and, using a sharp knife or scissors, cut them into triangle-shaped nachos.
- Arrange the tortilla triangles on the tray in a single layer, ensuring they do not overlap (this allows them to bake evenly).
- Bake for 6-8 minutes, flipping them halfway through, until they are crispy and lightly golden. Keep an eye on them towards the end to prevent burning.
- Remove the nachos from the oven and let them cool for a few minutes. This helps them harden a little more for a perfect crunch.
- Cook the minced meat with the tomato sauce.
- On a deep plate, place a small bowl in the centre. Layer the nachos at the base, add some minced meat on top, and sprinkle with grated cheese. Repeat until all the nachos are used.
- Bake for 2-3 minutes at 170°C until the cheese melts.
- Add some cheddar sauce to the bowl and serve with pico de gallo on top.
