- Heat a bit of olive oil in a large pot over medium-high heat.
- Add the chicken thighs and chorizo, sprinkling salt to taste.
- Cook until golden on both sides. Remove from the pot and set aside.
- Peel and dice the carrots, sweet potato, and leeks into cubes.
- Add the vegetables to the same pot and sauté briefly with a pinch of salt.
- Pour in 750ml of water and the chicken protein broth, stirring well to combine.
- Return the chicken thighs and chorizo to the pot.
- Simmer on low heat for 30–35 minutes, allowing the flavours to meld and the vegetables to soften.
- Remove the chicken thighs and chorizo from the pot.
- Shred the chicken meat and cut the chorizo into small pieces.
- Taste the soup and adjust the salt if needed.
