How to make: Protein-Packed Traditional Christmas Chicken Soup

  1. Heat a bit of olive oil in a large pot over medium-high heat.
  2. Add the chicken thighs and chorizo, sprinkling salt to taste.
  3. Cook until golden on both sides. Remove from the pot and set aside.
  4. Peel and dice the carrots, sweet potato, and leeks into cubes.
  5. Add the vegetables to the same pot and sauté briefly with a pinch of salt.
  6. Pour in 750ml of water and the chicken protein broth, stirring well to combine.
  7. Return the chicken thighs and chorizo to the pot.
  8. Simmer on low heat for 30–35 minutes, allowing the flavours to meld and the vegetables to soften.
  9. Remove the chicken thighs and chorizo from the pot.
  10. Shred the chicken meat and cut the chorizo into small pieces.
  11. Taste the soup and adjust the salt if needed.
  12. Serve the hot soup topped with shredded chicken, chorizo pieces, and a handful of cooked chickpeas.
