Ingredients
- 1 Tablespoon Olive Oil
- 1 Chopped Small Onion
- 1 Chopped Clove of Garlic
- 1 Chopped Small Courgette
- 70g of FoodSeries Textured Pea Protein (previously hydrated)
- Salt and pepper to taste
- 1/4 Teaspoon Oregano
- 1/2 Teaspoon of Sweet Paprika
- 1/4 Teaspoon of Ground Cumin
- 90g Tomato Sauce
- 4 Whole Wheat Tortillas
- 1 Beaten Egg

How to make: Love Empanadas: Savoury Hearts for Valentine’s Day

- Hydrate the textured pea protein according to the product instructions.
- Heat the olive oil in a frying pan over medium heat. Sauté the onion and garlic until translucent.
- Add the chopped courgette and cook until soft (about 5 minutes).
- Stir in the textured protein, paprika, cumin and oregano. Mix well and cook for 3 minutes.
- Add the tomato sauce, mix and cook for another 2 minutes. Adjust salt and pepper. Remove from heat and allow to cool slightly.
- Cut the whole wheat tortillas into heart shapes using a large biscuit cutter or with a knife and a template.
- Place a small amount of the filling in the centre of one of the hearts.
- Brush the edges of the heart with beaten egg to serve as glue.
- Place another heart on top and press the edges together with your fingers or a fork to seal them (if you have a similar but smaller mould, use it first to seal the heart).
- Preheat the oven to 180 °C. Place the pies on a baking tray lined with baking paper, brush them with a little beaten egg and, if desired, sprinkle spiced seeds on top. Bake for 10-12 minutes or until golden brown.
