What is Hydrolyzed Rice Flour?
Hydrolyzed rice flour from FoodSeries is a powdered vegan food preparation with sweetener, (depending on flavor), made from milled, sieved, and hydrolyzed rice, with an extra-fine texture.
We present a rice flour treated by hydrolysis, a special process that turns the flour into a much simpler structural food, with an extra-smooth texture and excellent dispersion, low sedimentation and retrogradation.

Regular rice flour or hydrolyzed?
Hydrolysis is a chemical breakdown (simplification) process of complex structures, in this case carbohydrates, to ease digestion and absorption of the simple molecules that compose them.
Hydrolysis allows the natural starch in rice flour to break down into:
- Mainly: Dextrins, starch degradation byproducts that are much simpler molecularly, a kind of “pre-digested starch”.
- Secondarily: Small amounts of maltose, maltotriose, and glucose.
The sugars present in hydrolyzed rice flour are natural, not added, and result from the natural depolymerization process of starch, so they are completely natural, coming from the food matrix.
Non-hydrolyzed rice flour is a great alternative for gluten-free recipes or shakes for people who don’t have trouble digesting intact starch and/or don’t need a quick energy boost to the blood.

How to take Hydrolyzed Rice Flour?
You can reconstitute it in a container with a mixing tool like a fork or whisk, but the chance of lumps forming is higher than if you use a shaker with a tool that increases mechanical tension (like a ball or anti-clump grid). Since it’s a very hygroscopic starchy product, small clumps almost imperceptible to the palate may appear.
The amount of liquid to use depends on its physical characteristics (mixing in water is not the same as in milk), liquid hardness, temperature, and other factors, so it’s best to add the product little by little until you get the desired texture.

You can make an excellent pre- or post-workout porridge by mixing:

Ingredients
