Maple syrup is a sweet nectar made from the sap of the maple tree from its Sugar, Red and Black varieties, native to the northern regions of the American continent. Meridian has come up with a process to extract it sustainably from the maple trees of North America.
This syrup was already consumed by the indigenous people of eastern Canada before the arrival of the European settlers, so that the latter quickly learned how to harvest and process it. The natives had managed to obtain a substitute for the sugar contained in the wild fruit.
The process of obtaining the syrup begins by drilling the trunks of the maple and letting out the sap that is collected in small containers. Then, it is cooked until the sweet syrup is formed, which starts to thicken as it shrinks.
Approximately 40 liters of sap are necessary to make 1 liter of maple syrup.
