What is Tamari Soya Sauce?
Tamari Soya Sauce by Meridian is a sauce typical of Asian cuisine. It is made only from soya fermented with koji (Aspergillus oryzae) and added water and salt.
What are the properties of de Tamari Soya Sauce?
Although it looks very similar to the conventional soy sauce we often see in supermarkets, it is actually a sauce with special characteristics. It is thicker than conventional sauce and, although it shares the characteristic salty taste of soy sauce, it is slightly more intense and flavourful. Tamari sauce is often referred to as a variant of soy sauce.
Both sauces are made by fermenting soya, but a true tamari sauce does not contain wheat, which is often the case with conventional soy sauces. This feature makes tamari sauce suitable for coeliacs as long as it is made according to the traditional wheat-free recipe. Nutritionally, it is very low in colours and sugars, but contains quite a lot of sodium.
It is used sparingly in cooking (it should be added at the end of cooking to keep the enzymes alive) and salt should be avoided in the dish. It goes very well with all types of meat and fatty fish.
Also widely used as a sauce to accompany shushi, noodles, rice or wok vegetables. It is a natural sauce free of GMO, colourings and flavourings.
It does not contain any animal ingredients and is therefore suitable for vegetarians.
