What it Shoyu Soya Sauce?
Shoyu Soya Sauce by Meridian is a typical sauce from Asian cuisine.
Historically, it is the first soy sauce to be introduced in the West. It is made only from soy and roasted wheat grains fermented with koji (Aspergillus oryzae) with water and salt. As it is made with wheat, it contains gluten.
What are the properties of Shoyu Soya Sauce?
It is lighter than Tamari sauce and has a slightly milder taste because it has less soy and salt.
Nutritionally, it is very low in colours and sugars, but contains a fair amount of sodium.
It is used sparingly in cooking (it is recommended to be added at the end of the preparation of the dish to keep the enzymes alive) and salt should be avoided in the dish as this sauce has quite a salty taste.
It is perfect to accompany any kind of meat and fatty fish. Also as an accompaniment to shushi, noodles, rice or wok vegetables.
It is a natural sauce free of GMOs, colourings and flavourings.
It does not contain any animal ingredients and is therefore suitable for vegetarians.
